Cold Sesame Noodles with Five Spice Tofu

Ingredients: soba noodles (buckwheat), firm tofu, carrots, zucchini, five spice, sesame oil, cilantro, scallions, miso paste, salt, pepper, lemon, tahini/ peanut dressing, chili flakes

Recipe:

1. Boil your soba noodles until soft
2. Run under cold water and add a bit of sesame oil to avoid stick-age
3. Spiralalize zucchini and carrots
4. Take out tofu from package and drain water
5. Cut into cubes and season with sesame oil & five spice
6. Place on air fryer sheet and air fry for 12 minutes on 400F, flip halfway through
7. Sesame dressing - use premade sesame dressing or use miso paste, salt, pepper, lemon, tahini paste, chili flakes, and grape seed oil to create a sesame dressing
8. Assemble noodles, carrots, zucchini, top with tofu and sriracha sauce
