Chana Masala Sandwich — inspired by @seemagetsbaked Coronation Sandwich!

Ingredients: Bread, butter, canned garbanzo beans, 1/2 onion, 1 tablespoon tomato paste, 2 birds eye chilis, ginger, garlic, cumin seeds, coriander powder, turmeric powder, chili powder, salt, pepper, garam masala, yogurt, mayo, pickled onions, cucumber, tomatoes, arugula, pepper jelly, avocado chutney (cilantro, lime, cottage cheese, cumin powder, salt, pepper, jalapeño, avocado)

Recipe:

Chana masala:
1. Chop up 1/2 onion, birds eye chilis, ginger, garlic
2. Heat up a pan with some olive oil, once glistening add in cumin seeds, onion, birds eye chilis, ginger, and garlic
3. Once fragrant and onion is translucent add in your tomato paste, coriander powder, turmeric powder, salt, pepper
4. Cook until a paste forms and add in your garbanzo beans & garam masala, sauté until garbanzo beans are soft (3 minutes)
5. Once your chana masala is cooled, in a bowl add some yogurt & mayo - toss in your chana masala from the pan and mix together
6. Put this aside and make your avocado chutney - in a blender mix together cottage cheese, avocado, salt, pepper, cumin powder, lime, cilantro, jalapeños and some water - blend until desired consistency.
7. Cut your tomatoes & cucumbers in slices
8. On a pan, toast your bread with some butter
9. Assembly! Take a piece of toast and spread some avocado chutney, add some arugula, cucumbers, tomatoes, chana masala mix, pickled onions, & on the other slice of bread add some pepper jelly/ tamarind chutney/ mango chutney and finally place the piece of bread on top of your sandwich! Cut in half and enjoy!
