Ground Turkey Bulgogi Bowls

Ingredients: Ground turkey, bulgogi sauce, carrots, zucchini, brown rice, pickled onions, kimchi, scallions, salt, pepper, garlic, ginger, cucumbers, egg, soy sauce, rice wine vinegar, sriracha, sesame oil

Recipe:
1. Mince your garlic, ginger, scallions
2. In a large bowl, add ground turkey, minced aromatics, bulgogi sauce, and some sriracha. Mix together and cover, marinate for 1 hour at least
3. In the meantime, chop your carrots and zucchini into long strips
4.Soak your brown rice & cook
5. In a wok or pan heat some sesame oil, once glistening add in your ground turkey with marinade
6. Cook until turkey is cooked through, about 5-6 minutes
7. Take out the turkey, add some more sesame oil to the same pan/ wok and add in your carrots, zucchini, some rice wine vinegar, soy sauce, & sriracha
8. Cook until carrots have softened, but not overly mushy
9. Take out your vegetables and in the same pan, crack an egg and cook until desired yolk consistency
10. Cut your cucumbers into slices
11. Assemble! In a bowl add brown rice, add your veggies, add your ground turkey, pickled onions, kimchi, cucumbers, and top with your egg. Add any toppings like scallions or sriracha if you wish!
