Seasoned Tilapia with Lentil, Beet, & Goat Cheese Salad

Ingredients: tilapia, Italian seasoning, salt, pepper, chili flakes, lemon, garlic, lentils, beets, goat cheese, arugula, olive oil

Recipe:

  1. Pat tilapia dry and place on a baking sheet

  2. Drizzle with olive oil and season all over with Italian seasoning, salt, pepper, chili flakes, and grate a garlic clove over it

  3. Cut up lemon into thin slices and place over tilapia

  4. Preheat oven to 350F, once heated place tilapia for 12 minutes or until fully cooked

  5. Once cooked top tilapia with chopped parsley

  6. In an instant pot, add your lentils and water or broth

  7. Cook on high pressure for 6 minutes or until lentils are cooked to your desired firmness

  8. Iā€™m a bowl, put arugula, chopped up beets (we used canned), goat cheese, and add in your lentils once they are cooked and drained

  9. Top salad with dressing of your choice! We made an olive oil & balsamic vinegar dressing with lemon
