Roasted Romanesco Cauliflower Topped with Queso

Ingredients: Romanesco cauliflower, olive oil, salt, pepper, hatch chilies, cumin, queso, chipotle peppers, milk, cheddar cheese, pickled jalapeños, cilantro, lime

Recipe:

  1. Preheat oven to 350F

  2. Clean and place cauliflower on baking sheet

  3. Brush cauliflower with olive oil and seasonings (salt, pepper, cumin, hatch chili flakes)

  4. Cover cauliflower with foil and place in oven for 60-70 minutes, once complete remove foil and place back in oven for 20-30 minutes

  5. Now prepare your queso, as a shortcut use premade queso and add to a nonstick pan on low heat

  6. Add some milk, cheddar cheese, cancer chipotle peppers, and some pickled jalapeños & their juice

  7. Mix well and add in any additional seasonings you want

  8. Take cauliflower out of oven and layer on queso, add cilantro and lime!
