Cauliflower Fried Rice

Ingredients: Cauliflower rice, frozen veggie pack (or fresh), ginger, garlic, soy sauce, sesame oil, scallions, rice wine vinegar, sriracha, eggs, chicken (if using), furikake, chili oil, onion, thai chilies, black pepper, and chili flakes

 

Recipe:

  1. In a wok add some sesame oil and heat up

  2. Once the oil is heated, add 2 eggs and scramble, take out and put to the side

  3. Add some more sesame oil and heat

  4. Once the oil is heated, add garlic, ginger, onion, thai chili

  5. When the onions turn translucent, add in your cauliflower rice and sautee until cauliflower is nicely roasted

  6. Then add in your frozen veggies, sautee until veggies look cooked through

  7. At this point, add in your soy sauce, rice wine vinegar, & sriracha

  8. Mix together all the components in your wok, add in your eggs and cooked chicken pieces

  9. Once everything is mixed together and cooked through, turn heat off

  10. Top with shopped scallions, furikake, chili oil, & sriracha
