Oat flour Poppy Seed Banana Bread with an Orange Glaze

Ingredients: 3 old bananas (or fresh), 2 eggs, 2 cups rolled oats/old fashioned (blended for oat flour), 1/2 stick butter, 1/2 cup Greek yogurt, 1/2 cup brown sugar, 1 teaspoon vanilla extract, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon nutmeg, 1 teaspoon cinnamon, 3 teaspoons poppy seeds (dependent on preference)

Recipe: 

  1. Blend oats to make oat flour (I did old fashioned oats)

  2. Preheat oven to 350 degrees F

  3. In a stand mixer, add in softened butter & brown sugar until everything is mixed

  4. Add in Greek yogurt, eggs, & vanilla extract to the stand mixer and beat until everything is a smooth consistency

  5. Add in bananas (make sure they are nice and mushy for easier blending) and blend until everything is mixed well

  6. Add in dry ingredients - oat flour, salt, nutmeg, cinnamon - mix together with a spatula - do not over mix

  7. Add in poppy seeds and mix

  8. Butter a bread pan, add in banana bread mixture

  9. Put pan into the oven - set timer for 50 minutes (mine baked at 40 minutes, but double check with a knife/fork)

Orange Sugar Glaze: 

Ingredients: 

  • Orange zest (1 orange)

  • Juice of 1/2 orange (shouldn't be more than a tablespoon)

  • 1 cup powdered sugar

Recipe: 

  1. Mix together the juice of an orange and powdered sugar until a smooth consistency

  2. Add in orange zest

Assembly: 

  • Once the banana bread is done, let it cool for 30 minutes and remove from the bread pan

  • Spread your orange glaze on the top of the banana bread

  • Top with walnuts/almonds
